I am not expecting, based on that, filet mignon. But I'd sure the heck expect to have some sort of option to buy a sandwhich or something similar. And to follow up, just because my ticket says "snacks for purchase" doesn't exclude the possibility that meals would also be available for purchase given the information on the main page that comes up when I google "AA meals". The ticket may imply 'only snacks' are available, but it doesn't explicitly say that.

Having to be on flyertalk and read between the lines shouldn't be a requirement for a passenger to discern what experience they should get.

This is the problem. It's a known issue with AA's caterers and, at least from what I can see, AA doesn't do anything about it. Maybe there are financial penalties we aren't seeing, but other than that, there doesn't seem to be much incentive for the catering companies to get better. The problem is, at least as far as I know, there aren't a whole lot of provider options for this at most airports, so I don't think AA can just move to other companies. I think if a competent caterer can get into the field, it really could be helpful (as long as AA would recognize they need to move to the new provider).
AA likely is paying bottom of the barrel prices and getting the equivalent service. Much like AA's inflight service, it's likely rudderless/unmanaged.
