This is the problem. It's a known issue with AA's caterers and, at least from what I can see, AA doesn't do anything about it. Maybe there are financial penalties we aren't seeing, but other than that, there doesn't seem to be much incentive for the catering companies to get better. The problem is, at least as far as I know, there aren't a whole lot of provider options for this at most airports, so I don't think AA can just move to other companies. I think if a competent caterer can get into the field, it really could be helpful (as long as AA would recognize they need to move to the new provider).
