Generally, JAL's is very good. Hardware depends a bit, SFO NRT tends to get SSIII on 787-9, which is really JAL's least attractive full flat seat. It is a rather compact reverse herringbone seat, be sure to get a window seat on those. I am not sure what BLR gets.

2 hour connection in Narita is perfectly fine, coming from the US there is not transit security check.

You will need to order a special meal as a vegetarian, and to fully avoid eggs, maybe even a vegan meal. Though I am not sure of the exact variations of special meals offered. There may be something in the more detailed options that suit your requirements better than vegan.
