Just a point of clarification: Apps like Teams use a lot of data even without video/calls; again, I wasn’t referring to using it for video and calls (which I don’t believe are permitted, nor would they work given the latency).

Yep, the moment it's "cloud" related, just expect this stuff to work only properly with a stable, significant bandwidth Internet connection. Teams tends to be a "heavy" environment because everything is -user-friendly- integrated.
Revert to classic, if you want to have something "stable" and useful in an airplane.
