For Udaipur, I personally love The Leela there. The service at Leela has always been amazing while I have heard mixed things about Udaivilas. Udaipur also has a new Raffles a bit away from the city though. If you are planning to visit during marriage season in India (November to January/February) - Udaivillas has a lot of marriages happening which could either be fun or annoying.

For Jaipur I definitely recommend the Oberoi.

Few other notes on the travel part:

Agra to Ranthambore - car would be best IMO. No good direct trains, car should take 6 odd hours.
There is only 1 direct flight from Jaipur to Udaipur (6:40 in the morning) (Rajvilas to Udaivilas).

Alternative path you could take is to go south Rajasthan first and make your way up via car:
New Delhi to Amarvilas by car
Agra to Udaipur (flight from Delhi would be best I think)
Udaipur to Jodhpur (car)
Jodhpur to Jaipur (car)
Jaipur to Ranthambore (car)
Ranthambore to New Delhi (car or take Rajdhani 1st AC)

You could also do New Delhi - Udaipur loop first and then do Agra visit from new Delhi by car at the end.
