Is it possible to go same day standby on the IAH-NRT non-stop? Not sure if same "destination" is tied to airport or to city. Can this be done online?

Also, if a flight status shows that economy is "full" but the seating map shows many seats still available, what is the disconnect - is it basic economy unassigned?
