"Fresh" is not really a thing with Gelato. It's a bit of a gimmick, and not particularly environmentally friendly(something to remember as corporations get louder about their environmental concerns).
In fact, I'd argue the ingredients in the pods are less likely to be as fresh as pre-made, which uses cream delivered directly from a dairy, and not the ultra high temp treated cream in use for extended shelf life of the pods.
Reminds me of "fresh" pasta in stores, which doesn't offer the desirable al dente texture of traditional dried.
