If you have time and can find inventory you can fly IB. Personally I have too many BA miles and not enough AS miles, but IB and EI are still the better options. I would not fly in Icelandair inferior biz class seats excepting perhaps to visited Iceland, which is on my bucket list.

never fly international economy (haven’t flow TATL economy since 2001) but last summer I did decide to use AS miles for FI in coach because the flight is so short. ~7 hours SEA-KEF and it was perfectly fine. The food I preordered was adequate, although the portions were small. I also bought the bulkhead window seat (7F) on the 757. For the value, it was a great flight and Iceland was absolutely incredible. Two weeks and I still wasn’t ready to go home. I highly recommend it!
