Incidentally, all the satay on my side of the cabin had been pre-selected, so the flight attendant had to apologise to several people who asked why they couldn't have it ("that passenger reserved the last satay 48 hours before the flight", etc)
I've had that before, it's pretty good(if a bit small). Much preferable to overdone eggs several hours later too.
But I am amazed that preselect just comes out of the standard loading. It can't be difficult to load the preselect dishes and then still balance the numbers of everything else according to the usual quotas amongst the remaining passengers, just as they would for any variation in passenger numbers? I don't usually lay in but that's an amateur lack of planning.
Might explain why I've been offered a few "off menu" dishes recently though, well done to the crews!
