A couple of thoughts to add
Completely agree on the private jeep and your comments about what are some of the concerns with sharing with others. If you can swing a private jeep it definitely enhances the experience. Be sure not to be in a jeep where there are three seats across vs two where everyone has a "window" seat.
Also agree you should probably be aware of how long is too long to have a fairly repetive and scheduled type of vacation for your own group. 2 weeks in camps seems like a long time for us..ymmv. We enjoy a mix as you will see from comments.
On Capetown there is a lot to do if you want to mix city and safari. There's Robben Island if you like historical sites and the Botanic Gardens are beautiful. The wine country of Stellenbosch and Franschoek are also worthy of visits and meals. If you don't want to go thar far out visit Groot Constantia. Understand your view of Capetown as Califirnia like, I've used that description as well, but that might be a big difference from your home view and therefore a little more special.
Understand that most people are going to Africa to see animals but we spent time in JNB as well and enjoyed it. We went to the Cullinan diamond mine saw downtown JNB..and the lilisleaf farm where Mandela lived before prison. It provides a bit more insight into the country.
I really enjoy the sharing of experiences and insights from these forums and learn something useful to think about as we plan a trip.
