The places I often stay at have removed plastic water bottles, but they haven't removed water bottles from the room. Some properties are just using glass bottles, and in some cases, they use refillable bottles and have process for filling them with either still or sparkling water at the hotel. In the example below at the Chateau Lake Louise, they use the glass bottles below, with the design of the flip cap telling you if it's sparkling or still. Whenever you get your car out of the parking valet, they just give you commercially packaged glass bottles of water to go.
