What variance are you referring to? The service flow is a meal soon after takeoff and a lighter one before landing, with snacks on request/from the galley in between. No surprises here.
Possibly variation across airlines, although apart from dine-on-demand concepts (in which case it doesn't really matter from a scheduling standpoint), pretty much every airline roughly follows that approach.
