LH will not issue a statement of delay; this is not common in Europe. It is unreasonable of your insurers to require such statement if you have other documentation for the delay (screen print). I suggest not waste more time on this with LH, but revert to your insurers explaining that carriers outside the EU don't issue such statement and request reimbursement without the statement.
They definitely have me for in the past although they never included reason for the delay for the disruption.
