I don't think you can make the reservation and charge to her card. If you can, then yes, she would get the credit.
Amex travel checkout presents you a drop down of your cards, but upper right you can choose to enter another card manually. Since the reservation could be canceled/refunded, I gave it a try.
Charge posted as AMEX FINE HOTELS. Took a couple days to go from pending to posted. FHR $200 credit posted one day later.
