I would think they can do a full check-in at the gate but I have no idea so don't rely on that at all.
Just wanted to thank everyone for their responses to my original post/question.

To post here how it went in case it might be useful for someone else:

Back in February, we self-connected without checked bags, so arriving with Southwest in Terminal B we walked inside of the secure area to Terminal E and enjoyed the British Airways lounge before boarding the Iberia flight.

For both my wife and myself (U.S. passport and EU passport), we were able to check in online in the app, and then when it was time to board, they only did a doc check before letting us enter business class on the plane.
I am happy that we did not have to go through security or stand in line at the check in counter.
