Upgrading is generally good value on British Airways when you book Premium Economy and upgrade to Club World. That is the Avios sweet spot. All you need to do is ensure there are Club World seats available on the flight you want to book in Premium Economy, then you just upgrade it after you've booked. Aer Lingus is less value because they have economy to business, so it costs more points to move up "two classes" - even though it's only one as EI don't have Premium Economy.
Searching on any of the airlines websites is not as good as a Skyscanner or Google flights. There are places like SeatSpy and Reward Flight Finder that are better for searching, but these are really only good for BA and some others, not for EI. You will need to use the Avios site and just live with the search function being what it is.
I think getting Concierge for €2,100 is very well done. What else do you want to know?
