Using your Avios for business class just requires you to find business class flight availability on the Avios site.
The avios site is a mess compared to skyscanner or google flights. I mean especially if you are open to when you travel but want to go business and somewhat flexible in where you travel. Does that make sense?
With regards to the BA angle, you can search for award flights there, and you will find all the oneworld alliance partners included as well (so, for example, if you want a flight from Sydney to Melbourne using Avios on a Qantas flight, it will appear). Due to BA being in the alliance, there are many more options to earn and burn. As you've noted, you can transfer points back and forth at your leisure to pay for whatever flights you want.

I guess I have no problem doing research but ideally id prefer going through some good historical reading that is applicable to Aer Lingus users.
I understand the basics but id like to maximise what I do.
In terms of tier credits I feel like I have maximised getting to concierge at a cost of 2,100 euro. If it was not this forum I would have spent that amount getting to silver.
