I suppose since HK is mostly urban, your "should be king" idea makes sense, but many smaller vendors still prefer cash (just like in Manila, Bangkok, Kulua Lumpur, etc). Mainland China is somewhat unique because WeChat and Alipay penetration is near universal anywhere there is cell phone service.
