Yes, you can be on the AirPort Express faster than you can be in a taxi - just note the train times:
Travel comfortably between the airport and Central in just 24 minutes on the Airport Express. Trains depart at approximately 10-15 minute intervals from 05:54 to 00:48 daily.

You're about 50 steps from the taxi queue when you step off the train, and you'll be in your hotel lobby in ~10 minutes depending on where you want to stay.
BTW: the time is roughly the same to take a taxi instead of the Airport Express to your hotel in Wan Chai or Central (roughly 40 minutes), the train is just less expensive.
