It's not possible under TWOV rules. TWOV requires that you FLY into a port, and exit for a DIFFERENT DESTINATION (so if you entered from Hong Kong, you can't exit to HK).
That said, I don't know if Shenzhen VOA is available to French citizens. You may be able to go that route.
