Good airlines allow you to order on screen such as NZ or B6.
If the service is less attentive you have to give the waiter a sign, walk closer or use a call button/ring. Especially US and EU carriers provide bad service and people are fine with it. In Brazil everyone uses the button.
We did a call button test on a recent trip earlier this year and timed the response in J.
VA - small cabin, but FAs in the back, was about ~30 seconds
SQ - less than 5 seconds
QR - less than 10 seconds
UA - ~30 seconds
AC - no response
