1) This depends on availability of other flights on the day - so really a case of how long's a piece of string. You can check current availability on ExpertFlyer or ask someone here if you don't have access, but plenty can and will change before your flights.
2) They will be happy to move you subject to Avios availability and change fees.
3) If you're at EDI anyway the night before, I'd use it - if not, then it's not worth the trip.
In your situation I'd stick as is.
