Agreed. Memory is escaping me at the moment but I'm remembering seeing an airline menu recently that had an optional chicken breast with a lunch or dinner. Heck, just about any restaurant with a meal-portioned salad offers a protein add-on. I wouldn't think that to be too difficult for Amtrak to do even with the cooking apparatus they have on Acela.
Overall the menus look to be an improvement but I'm more curious to see the presentation of the actual meals in production.
Agree, hopefully this evolves in the future. But I am still taking the changes as a net positive. Prior to this I had taken to just ordering the cheese tray every time because everything else was borderline-inedible.
