If you paid 140k for DOH-LGW, LHR-IAH I'm guessing you just booked it via aa.com multi-city, with 42.5k for DOH-LGW (standard partner award pricing) plus an AA web special 97.5k for LHR-IAH?
If that's the case, then you're already paying for 2 awards so a stopover is no problem. It should be possible (in theory) to keep just the DOH-LGW award and cancel the LHR-IAH and receive a refund for the 97.5k. You would then need to just book a separate LHR-IAH award on whatever date you want for whatever the current pricing is (plus some extra taxes).
I say
in theory because with the recent changes AA has become very temperamental in what (if any) changes are allowed to certain awards.
