Agreed. Memory is escaping me at the moment but I'm remembering seeing an airline menu recently that had an optional chicken breast with a lunch or dinner. Heck, just about any restaurant with a meal-portioned salad offers a protein add-on. I wouldn't think that to be too difficult for Amtrak to do even with the cooking apparatus they have on Acela.
Off the top of my head, UA recently had a thai noodle dish with "ginger beef" on the side, and AA has a grain bowl with optional salmon (or possibly an alternate protein).
They could easily offer, say, a link of Italian sausage with the lasagna or sliced beef/chicken (heck even grilled shrimp) with the noodles.
