You can basically ignore the "booking class" column in the table completely for Air Canada - virtually none of it maps.
I can't speak for Premium Economy but for regular economy, the percent of points you get is determined on Air Canada's own mapping (like whether it's Standard, Latitude, etc).
I have booked Economy tickets based on booking class (e.g., T, L, etc.) and those get totally ignored. It goes by Air Canada's classes (Basic, Standard, Latitude, etc.)

I have called Air Canada and Aegean to inquire and what they explained is basically not what the tables say.
