Since some time Qantas has changes covered in the T&C. As I read it changes and new dates are allowed, you'll just have to stay within the dates of the promotion.

E.g. from the last promotion: If you cancel your initial qualifying booking or change it to be outside the promotional period, the double Qantas Points or double Status Credits offer will not apply.
