(When I did the same trip in 2016, I got to AEP only to discover that my Aerolineas Argentinas flight had been rescheduled to two hours earlier, with no notification, and I had to do some negotiating at the counter to get on a later flight that day—that sort of experience would send my mom into a tailspin.)

If you can convince them to start from JFK, they can get a nonstop on American. I'd think that a car service to JFK is better than a connection at an airport somewhere mid-trip.
As for ground transportation, can you check with whichever hotel you book to see if they offer the service? As suggested, if you go with the better hotels near Recoleta (Park Hyatt, Alvear Palace, Four Seasons), they should be able to offer/arrange such services. Additionally, the hotels are well-located for getting to AEP the next day.
