In nearly 30 years here in China, I've never had a problem in a big western chain hotel except for the Urcove brand where not all allow foreigners.
You won't have a problem at the normal, western branded properties. That's where at a minimum the govt wants foreigners staying.
I usually for ex stay at the Intercontinental in Tibet or Accor or Radisson in Xinjiang, which are two of the more sensitive areas. Most domestic 5 stars accept foreigners too. Just some but not all cheaper ones don't.
