If crayfish was lobster then why does no one call lobster crayfish? Because they are different. And they sell at different price points and lobster is seen as more exclusive.
While you are right that taste and look are similar, it's a matter of honesty and integrity that SQ describes items in the menu correctly.
When someone charges you 30$ for a glass of champagne, would you be okay to get sparkling wine instead? Looks the same, tastes the same...
