2 adults on a skycouch is a game of contortion. Depending on how big of a frame each person has will dictate how 'possible' it might be. But TBH for me personally I'd never do 2 adults for 1 couch. At best you are both probably only going to fit in the 'spoon' position, likely someones feet will be dangling in the aisle and constantly knocked, little room to adjust position etc.
I'd put it in the impractical bucket, unless you are both 'small' adults then maybe it may work for you. Your better option is considering PE or just deal with standard Y seating IMHO as 2 sky couches would be getting up there price wise.
