I stayed at the Protea Stellenbosch, its probably the better option, though as a Titanium I didn't receive really any upgrade, however it was a close-in booking. Would second the Franshoek recommendation, most of the wineries are reachable from Franshoek and it's a more relaxed atmosphere, Stellenbosch felt like a bustling busy town in comparison. The Protea Franshoek was already fully booked when I was there in 2019 so we had to stay elsewhere, wasnt memorable but there are plenty of options in the town.
