I ended up chatting with the server we know because he always works the ski seasons at the same Hyatt we always go to and he said they do get the tips at normal rate, so at least at that full service venue they're doing it properly.
While there are items to order, we had the buffet, so waiter brought water, juice, coffee and tea, and were extremely attentive, refilling very often.
