You'll always get people saying "don't fly with airline X as they screwed me over" but in reality most flights run with minimal hassle. I'm sure actual figures for disruption are available if you want to play the percentages but your probably better at looking for the timings and total prices for what you require.

Some things to think about:
Are you restriced to BKK or can you use DMK?
Packages for bags, seats etc usually work out more expensive than buying individual items unless you use all the products. ie if you don't think you'll want to eat but all packages include a meal you might be better off buying what you want seperately.
CNX to KUL only has one choice. AirAsia 10 flights per week.
Look at non-LCC OJ to CEI and return from CNX, both via BKK (and KUL on return) with stopovers. It might be better than individual flights with LCCs.
How big is your briefcase? A rollaboard and a briefcase might be pushing it on an LCC unless it's a pretty small briefcase.
I always travel with a carry on and my laptop case on Air `Asia. They only ask to weigh the carry on and so long as its not much over the 7kg mark they are happy to let it go. They never weigh the laptop case (it is one with 5 zippers and can expand a bit too) though I show it to them every time. So I do not think a brief case is going to be a problem.
For me the extra fare and no frills on ThaiSmile is not worth it when compared to Air Asia. I actually prefer the less hassle and people at DMK for the domestic flights.
