I skipped over Santa Barbara because of your non-wine/hiking instead guidance. I associate my visits to Santa Barbara with wine (both the many tasting rooms in the city as well as all the towns just north like Santa Ynez/vineyards out that way). But if you have never been there, it is a great weekend and there are plenty of other things to do. Many great restaurants. Excellent Arts and Craft show along the waterfront on Sundays. And I am sure there are places to hike around that area too or I think you can even do a day trip to the Channel Islands from there.
One day might be worth driving around the wine towns as well, even if not stopping for wine - really beautiful area. And Solvang is a trip.
Marriott options... not sure how much value to be had at the Ritz Bacara - but it is definitely nice. The Steward looks nice but not openng until late June. The Waterman seems to have mixed reviews but a pretty good location close to State St and the Wharf. Courtyard Downtown looks a lot nicer than the Courtyard Goleta where I have burned many a free night cert - but not sure you had a $350/night Courtyard in mind when you said well priced!
