Re Pismo, I've never stayed there but Vespera Resort has always been on my radar screen. I have been to the Ritz Carlton Bacara in Santa Barbara several times, although prior to it becoming an RC. As someone that lives along the coast in Southern California, don't under-estimate how much traffic you're likely to have as you make your way north from Capistrano.
