After living in Tokyo in the 90s and making repeated visits there to visit family (I'm in Tokyo now, in fact), I can say that watching the "Iron Chef" on Food Network is a good way to see differing styles of cuisine. Of course, most of the challengers are chefs at very pricey places (Le Crin in Ginza, Hei Chin Rou -- HIGHLY recommended -- in Yokohama's Chinatown) but if you have cash to burn, watch the show for a couple of weeks and look the restaurants up online or in Zagat's.
