I've been fortunate enough to book NH F on AP points a few times now in the late fall and winter, always approximately 355 days out (as others have mentioned). Try NH 11/ 12 (ORD-NRT); in my limited experience, it seems to have slightly more availability than other NH North America routes.
I was recently able to get ANA F from YYZ via ORD to HND in March of next year. Coming back, it’s via IAD in J. Unfortunately, not the new cabins either way, at least for now. HND is much more convenient than NRT, especially when arriving in the evening, as in the case for my flight (NH 111)
