Hmm, maybe I'm getting my properties mixed up. I've done so many events in different places that it is quite possible I'm confused. I do know that their rooms are good (especially if you overlook the back, you don't want a parking lot view, and there are some rooms that don't really have a view at all). The restaurants were also good; my boss's boss had me go back after our forward group left and not tell them who I was so I wouldn't get preferential treatment and it was still great. It is amazing how some properties really try to woo you when they know you're checking them out for a possible event, then service isn't as good to others.
Thanksgiving is one of the busiest times of the year in the area (March is also quite busy). I'd book something ASAP with a rate you can change, then keep looking if you want. Heck even many lower end properties will get booked up around Thanksgiving. I had family visit around Thanksgiving a few times when I was living there, and they'd have to book 6-9 months out. If you want to do a jeep tour in Sedona, definitely book that in advance, as those will get full.
