Bought the eSIM from mobilematter while my wife was still at home, but you can get the eSIM cheaper if you buy it directly on the Three HK website. Otherwise, you just pay two or three dollar more if you buy it from mobilematter and you can use their support if you have any questions/trouble with it.
If you only need the card in mainland china you will be fine even without the Real Name Registration. If you want to use the card within HK, you need to upload a picture of your passport and wait till they approve it.
You will rent a car at Hongkong airport and drive to mainland? Not sure if that's allowed for foreigner, but even if you could, you understand that they have left hand traffic in hongkong and right hand in china? And you will need a driving permit for mainland.
