Generally Emirates allows outbound and inbound legs to be booked in different classes, regardless of how you book. In your case, you must book AKL-DXB-NCL in J and NCL-DXB-AKL in Y, which is what you are trying to do.
Re chauffeur drive, on your return leg where you want to upgrade to business with miles, chauffeur drive is no longer permitted on a Y to J upgrade. That has been the case since about March 2019.
There should be no problem getting chauffeur drive for your paid J outbound leg, unless you purchased a 'special' fare, which I think is also ineligible for chauffeur drive.
