I've stayed at several of those mentioned and would choose the Maurice - love the location near the Louvre and Champs Elysee and it was reopened just a year or two ago after a total renovation - fabulous bathrooms and the formal restaurant is wonderful.
I agree that you should price out things yourself before choosing to use AMEX or any other agency.
