There are plenty of hotels at Schiphol, it's easy to get into Amsterdam for a morning of coffee shops, Canal tours or whatever you like. AMS has been a nightmare at times in the last year or two, and 3 hours gives you essentially no leeway for even the slightest delay, given you have to collect luggage and check it in well before departure time.
