Another reason to un-checkin is if you checked in without your correct KTN entered in the PNR & didn't get TSA Pre. You fix this by un-checking, entering the correct KTN, and checking back in.
Don’t need to uncheck for this. Just edit the KTN and it should automatically transmits/updates BP if it matches.

Undo checkin has been available for years (going back as far as the PMCO website, if I remember correctly)--I use it all the time to make last minute changes to flights for travelers who have already checked in (can't exchange a checked-in itinerary in Sabre)--but it's always been a bit of a pain to find the right series of buttons to get to the undo checkin flow.
Not sure if Sabre lets you do this, but generally with UA’s system if you cancel out the reserved space for the checked in flights, it will automatically uncheck those coupons too. But again not positive if there are any restrictions on Sabre from cancelling space on day of travel.
