Already knew that Western credit cards weren't so big in the country, save for some Western hotels/hypermarkets/restaurants. But can I roll up to a Jinjiang, or similar Chinese brand hotel, and get away with not using a payment app?

I'm in what I believe to be about a tier 11 city (Zhangpu County), I haven't seen places that physically can't accept cash other than KFC or McDonalds here, however most places that aren't a grocery store won't be able to give you change for 100RMB. You end up having to bust 100's at a grocery store to get change if you don't want to (or don't have) enough balance on your account to use Alipay.
