Honestly the language barrier possibly has much to do with it. Regardless, you can always ask to speak with the cabin manager if you truly feel this way.
Asian airlines take service very seriously especially in first class. In the US, speaking with the purser rarely changes any situations especially in the service part, but in Asia, they will definitely address the issues immediately. You can even ask for a comment form, if you don't feel comfortable speaking with it. Just be polite and specific in what you feel! Definitely don't throw DYKWIA thing but expressing a polite disappointment will be sufficient.

Regardless of the day of time of the flight, you should at least be able to order a few light dishes in a speedy manner. Honestly most of those dishes can be prepared easily within a short period of time. Don't be shy in ordering a few more dishes, if you are hungry! Most local passengers tend to sleep through the flight so they definitely have plenty of food available. The Japanese airlines take "the seat belt sign" seriously so the only thing is that don't expect service unless seat belt sign was off. That's the difference between Japanese airlines and all other airlines, especially during takeoffs and landings. If the pilots ask the F/As to stay seated, they will do so!
