I'm thinking it best to do it on the plane, just show boarding passes to crew and let them know we've swapped. Any issues with that or better way to handle it?

I agree. There is no reason for FA to decline the swap, esp if you are letting your wife have the better seat. But honestly worst case scenario is simply that they decline and she is in business and you in first, as ticketed.
If I recall correctly, you will likely encounter issues should you attempt a swap when returning to the US. Just something to keep in the back of your mind
