Maybe someone can disentangle this, as it is not my experience over the past 8 or so years and multiple GUFS. Of course if booking a full award booking you need Avios space, (GUF to /I/ or /A/), or to Joker - which needs a certain set of booking classes (I, D, A - I think).
BUT if using a GUF from Avios OR cash you need either /I/ or /A/ in the cabin you want, you do not need to Joker. It is only the cabin you want that is relevant. Of course for cash it should be the lowest fare class avilable.
i.e. if there is an /I/ or /A/ seat that you want, and you use a GUF that is all that matters. The underlying revenue class (in terms of Avios, gets tricky for cash) can be sold out, it does not matter. they book into the /I/ or /A/ class and then do the Avios from the class below.
