If you are struggling with handbaggage and suitcases you'd certainly be better taking a taxi. That's not only because of security, but also because the hotel is awkwardly situated for public transport, at least until you get your bearings. The FIX metro station requires a change at Syntagma, and it's quite a walk from the IC. The bus also leaves you at Syntagma, facing either a tram ride or transfer to a taxi.
There's a (pretty much) no-argument set taxi fare of EUR40 from the airport, though the driver might insist you are heading for the EUR56 outer (Piraeus) zone: not so bad if you are two or more passengers (metro ticket is EUR9 per person, bus EUR6).
Pickpockets operate on all Athens public transport: a low level threat for residents and a threat not confined to Athens or Greece, but visitors can present an interesting target for thieves. The metro from the airport is a hotspot for this activity, the particular dangers are entering and leaving the train or if you don't find a seat and have to stand. The solution is to consider carefully where you keep passports, cash and cards travelling from the airport: and on trips within the city to carry as little of possible. There's no physical danger, the thieves are opportunists.
I feel the airport bus is somewhat less of a risk, but the melee surrounding the transfer of you + baggage to taxi or tram at Syntagma opens opportunities again.
I'd hate to colour your visit with alarm and caution: but while Athens remains a glorious city to visit the social environment has deteriorated massively over recent years. Although the threat of theft shouldn't be over-estimated, it's real and it's enhanced on the airport transfer: and the consequences of being a victim can be disastrous.
