I’ve taken a flight in the opposite direction between FUK-HND and we routed to the south of Mount Fuji and the left hand side was the side to see Mount Fuji.

You could also check the window view photos on Jetphotos.com and Airliners.net to see if there are any photos taken on HND-FUK flights showing Mount Fuji.

Both Flighradar24 and sites like Jetphotos and Airliners are good for planning if you like window seats and want to get an idea what is along your route.

Hopefully someone who has taken a flight on this route can provide some first hand info.
Appreciate the info. I will take a looking at Jetphotos and Airliners later. I was not aware of these 2 web sites.
Thanks.
